It is an easy to use liquid that is miscible in water, provides no discolouration to the surface of the meat and generates no off-odour.
Lactic Acid can be used at multiple stages of the processing of the beef to provide additional food safety in the supply chain. Initially it can be applied in the slaughter line before the bacteria can get attached, before evisceration or as a pre-wash to the surface before tenderisation and grinding. It can also be sprayed or misted as the final wash and left on the surface as a residual effect.
The use of Lactic Acid in this process can provide a number of benefits for the supply chain including the increase of shelf life and in turn generating less spoilage through its ability to kill pathogenic micro organisms.
