The Inulin and Oligofructose range is naturally derived from Chicory roots and is an excellent soluble dietary fibre, helping enrich bakery items. This can help consumers optimise their digestive health as well as aid with weight management through its low-caloric value. An example of an application would be a loaf of white bread with the same fibre content as wholemeal bread. The ingredient range can also help lower the sweetness of bread, as the sweetness of Chicory Root Fibre can be only 50% of sugar.
The range can offer taste and texture improvements. Inulin has a neutral taste so does not require any flavour masking. In cake recipes Frutafit® inulin provides good batter viscosity and great cake texture. It can also be included in fillings to reduce fat content, with the final product having similar physical properties to the full-fat versions but with reduced energy density and a enhanced fibre content.
