Chicory Root Fibre is naturally derived from Chicory and can be used as an alternative to Sucrose, which is the commonly used for adding sweetness, within chocolate recipes. Chicory Root Fibre is a low-energy, sweet carbohydrate that can provide a good textured, tasteful chocolate.
Although the use of Chicory Root Fibre may result in the loss of sweetness, it can provide a platform for other flavours and ingredients to shine through such as vanilla or hazelnuts. If a high sweetness level is required Chicory Root Fibre could be used in conjunction with high intensity sweeteners to produce a product similar to one that contains Sucrose, but which could be labelled as having no-added sugar. If you would like to go down the natural route you could include a natural high intensity sweetener such as Stevia to make up for the loss of sweetness.
