Preservatives can be natural or synthetic and are used in almost all processed foods. Salt and sugar have been used as preservatives since ancient times. Preservatives can be grouped into two main categories:
- Antimicrobials - block the growth of bacteria, molds and/or yeasts.
- Antioxidants - prevent or slow the oxidation of fats and lipids.
Overall, preservatives & antioxidants are used to assure that our foods are safe, appealing, taste fresh and can be transported and stored throughout the country.
